  METHOD OF MICROBIOLOGICAL ANALYSIS OF ICE CREAM AND FROZEN CONFECTION


 (a) Standard plate count.



 Proceed in accordance with the current method in AS 1095,
 Microbiological Methods for the Dairy Industry, save that the purpose of
 this method when five sample units each consisting of 100g or more of
 ice cream or frozen confection are examined as detailed, the result
 shall be reported as ``not exceeding 50 000 micro-organisms per gram''
 when at least three of the five sample units have a standard plate count
 not exceeding 50 000 micro-organisms per gram and any remaining sample
 unit have a standard plate count not exceeding 250,000 micro-organisms
 per gram.

 (b) Coliforms.



 Proceed in accordance with the current standard in AS 1095,
 Microbiological Methods for the Dairy Industry, save that for the
 purpose of this method when five sample units each consisting of 100g or
 more of ice cream or frozen confection are examined as detailed using an
 incubation temperature of 30deg.C, the result shall be reported as ``not
 exceeding 100 coliforms per gram of the food'' when at least three of
 the five sample units have a coliform count not exceeding 100 coliforms
 per gram and any remaining sample units have a coliform count not
 exceeding 1000 coliforms per gram.''
